Ingredients

  • 2 tbsp vegetable oil
  • 1 large brown onion
  • 3 spring onions
  • 4 garlic
  • thumb-sized piece fresh root ginger
  • ½ Scotch bonnet chilli
  • 2 tbsp ground turmeric
  • 1 carrot
  • 400g tin chopped tomatoes
  • 200g tin coconut milk
  • 400g tin black beans
  • 400g tin kidney beans
  • 1½ tsp sea salt
  • 1 tsp freshly ground black pepper
  • 500g/1lb 2oz white or brown rice
  • 5 fresh thyme
  • 1 tbsp butter
  • fresh flatleaf parsley
  • squeeze lemon juice

Method

  1. Heat the oil in a large frying pan over a low heat. Add the onion, spring onions, garlic, ginger, Scotch bonnet and turmeric. Fry for 3 minutes, until the onion and garlic are softened.

  2. Add the carrot, tomatoes, coconut milk, black beans, kidney beans, salt and pepper and bring to the boil. Add the rice, mix and, if necessary, add more water so the liquid level is just above the rice. Add the thyme and butter and bring to the boil. Reduce the heat to low, cover with a lid and simmer for 25 minutes, or until the water is fully absorbed and the rice cooked through.

  3. Garnish with the parsley, add the squeeze of lemon juice and serve.
